This cheese is similar in flavor to young or medium cheddar
with pale golden color, full fruity flavor and open, creamy
texture with small eyes. It is produced in wheels and
aged for up to seven months.

Cheese-maker Howard Bunce began making the new Petite
Creme in the summer of 2000. The cheese is made in a style
similar to Brie, but with a slightly higher cream content
and with a milder, more delicate flavor Petite Creme has
the hand-made look and flavor of a brunch or dessert cheese.
It is aged 5-6 weeks and will become creamier with age.
This cheese won first place at the 2001 American Cheese
Society.
